When reading books like The Farmhouse on Cemetery Hill Rd. and The Portal it is fun to reward yourself by eating a dessert typical of that era. Here is a recipe for Diet Ginger Bread which contains some fat but a greatly reduced amount of molasses while still tasting like Ginger Bread.
1/3 Cup Marg
1/3 Cup water
1/6 Cup Molasses
1/2 Cup Splenda
1/2 Cup applesauce
2 eggs
1 Cup flour
1/4 tsp. salt
1/4 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. ginger
1/4 tsp. cinnamon
Grease and lightly flour 8" square pan. Set oven to 350.
Melt butter in the water in microwave. When it cools slightly add next 4 ingredients.
Separately sift together all remaining ingredients then mix with the liquids until smooth. Pour into pan and bake for 30 minutes. Great aroma and taste!

You're right, you Have to eat Gingerbread while reading these books. The Farmhouse on Cemetery Hill sets the stage. It's like you can smell the Gingerbread baking. You're hooked.
Then the author gives us more in The Portal. You can now get a taste of that Gingerbread. Boy this is good (book and treat). Then the author just slams it all in Ah Grace. NOW you gotta have a big piece of cake. RIGHT!!!!
