My site offers you some good books which we hope you are enjoying this summer. In addition to that I want to begin offering reduced calorie treats to munch on while you read. I eat reduced fat and reduced sugar foods which taste great. See if you like them too. Today I will begin with:
CARROT CAKE
Lightly grease and flour a 10in pie plate; Heat oven to 375
Mix the following dry ingredients in a large bowl: 1.5 cups flour, 1/4 cup sugar, 1/2 cup Splenda, 1TBS. cinnamon, 3 tsp baking powder, 2 tsp. soda, 1/2 tsp. salt.
In center center of above add and beat as you go: 3 large eggs, 1 cup plain yogurt, 1/3 cup canola oil, 1/4 cup milk, 1tsp. vanilla, 1/2 cup unsweetened applesauce.
Add to the mix: 1/2 cup chopped walnuts, 1/2 cup raisins, 1/4 cup coconut flakes, and 2 cups of finely grated carrots.
Blend well and bake for 40 minutes.
Make frosting once cake cools with: 1 cup of plain yogurt, 1/4 cup powdered sugar, 1 tsp vanilla, and 1/2 cup toasted coconut flakes.
Very dense and delicious, please start with small slices if you are diabetic. Test and go!
The recipe for Carrot Cake sounds scrumptious! I want to make that as soon as I can. BUT no cream cheese frosting???? I don't know about that! Oh OK I'll try!😃
